This time, we visited “Gensho Kawara Soba Takase (Mojiko Retro Branch)” located in Mojiko Retro in Kitakyushu City, Fukuoka Prefecture.
The main store of “Gensho Kawara Soba Takase” is located in Kawatana Onsen, Yamaguchi Prefecture, and is a very popular restaurant that has long queues on weekends.

Soba soup from “Kawarasoba Takase”

Each seat has a pot of soba soup.
The style is to pour hot soba soup into a bowl and dip the kawara soba in it .
This soba soup is absolutely delicious.
The sweet soup has a faint aroma of Japanese dashi and is incredibly flavorful!

These tiles are extremely hot so be careful not to get burned!
The soba noodles are heated on the tiles in a similar way to a hot iron plate, making a crackling and popping sound as they cook.
Be especially careful with small children as they may get hot from the roof tiles!

Slightly thick brown soba noodles.
Apparently, they first fry them in oil in the kitchen and then bake them on top of tiles.
Apparently it is made with Uji matcha from Kyoto, so it’s a tea soba with a really nice tea flavor.
The soba has a chewy texture and is very satisfying to eat.

The beef is simply seasoned with salt and pepper.
It’s delicious even if you eat it as is.
If you soak this beef in soba soup, the flavor of the beef will dissolve into the soup, creating the most delicious soba soup .

Extremely thin golden thread egg.
It’s a beautiful golden-thread egg that isn’t browned at all.
This goes really well with Kawara Soba.

Plenty of green onions on top.
As you eat the Kawara Soba, the green onions roll off onto the tiles and cook just right, turning into fragrant, delicious !
I always put all the green onions that have spilled on the roof tile into my soba soup and eat it.

When you soak the seaweed in soba soup, the flavor of the seaweed dissolves into the soup, making it incredibly delicious.

Lemon and grated maple leaf are essential to completing the flavor of Kawara Soba!
